TESTI FOR GARFAGNANA NECCI

The iron ''testi'' are traditional tools used to cook the necci of Garfagnana, inheritors of an ancient knowledge passed down through mountain families.
They consist of two round, heavy plates made of natural iron, equipped with long handles that allow them to be handled even when they reach high temperatures.
Once heated over an open flame, the ''testi'' retain a long-lasting and even heat, a quality essential for obtaining soft, thin, and perfectly cooked necci.
The batter is poured onto the lower plate, then covered with the upper one, creating a sort of pressure “oven” that cooks the neccio from both sides without burning it.
The necci of Garfagnana are one of the most authentic expressions of Tuscan mountain tradition.
Cooked between the typical red-hot ''testi'', they acquire a soft interior and a slightly crisp exterior, preserving the characteristic rustic flavor of chestnuts.
